Coffee Flour is made from the coffee cherry – the fruit that surrounds the coffee bean. This is typically a “leftover” of coffee processing, either disposed of into streams and rivers or sometimes used as compost. However, the vast quantities of cherry relative to the coffee beans means that it can actually pose an environmental hazard to natural plants and wildlife.
Coffee cherry (cascara) has gained popularity as an alternative to coffee and tea, it straddles the middle-ground of both and has a naturally fruity flavour, similar to real cherries. By taking the processing of the coffee cherry a step further, coffee flour can be extended to be used in baking of all kinds – meals, pastries, drinks and shakes, and more.
It can replace flour up to 10% in any recipe, adding additional nutrients and small quantities of caffeine.
Because it’s fruit-based, it’s 100% gluten free.
